Hey Ladies! Coming to you with another one of my favorite recipes to feed my large family!
Tamale pie can be made with any meat but our favorite is shredded chicken or ground beef!
You will need:
1 box of Jiffy Mix
1 can of cream corn
1/2 cup of sour cream
1 lb of ground beef or shredded chicken
1 can of enchilada sauce
Bell peppers (1-2)
How do ya do it??
Mix the Jiffy Mix, Sour Cream, egg, and can of cream corn together!
Bake @ 400 for 20 minutes in a cast iron or a baking pan!
While that is baking, you should sauté those bell peppers, and onion. Add the ground beef and prepare that as directed on the taco packet!
When the corn bread crust comes out, fork holes all over. Pour the enchilada sauce all over (You won't need the whole can)
Take the beef mixture and put it all over the top. You will then add cheese! Add however much you want and bake for another 20 minutes @ 350!
You can add whatever taco toppings you like on top. We like sour cream or avocado!
This Recipe can be easily doubled!
